Grasslands’ Vegetarian Fare is Much More Than Tofu and Tempeh

Toronto’s health-conscious diners lost a favourite haunt last fall when upscale vegetarian restaurant Fressen served its last dish of seitan. Fortunately, the closing proved temporary; chef and owner Stephen Gardner revamped the space, retooled the menu and rebranded his business as Grasslands. The name suits: blonde woods lend a savannah-like ambience to the front-of-house lounge and refined dining room. Similarly, the creative, vegan-friendly carte promotes a good deal of grazing, with snack and appetizer options like rutabaga and parsnip frites, mezze and “charcuterie” plates and a trio of sliders. If you want even more meat-alternative goodness, seasonal entrees could include mustard-crusted tempeh and corn rigatoni with cashew cream.  –Craig Moy
