Valbella Gourmet Foods’ ‘Rohess Speck’ double smoked bacon is cured and hung to dry for two months, then spends 48 hours in the old-school wood chip-fired smokehouse—all on-site. “Other smokehouses are higher tech, but you really can’t compare the flavour,” says deli manager Chantal Von Rotz.
