Vermilion Bay is a tiny little town full of the friendliest people. Buster’s is famous for fantastic ribs with a blueberry barbecue sauce—a perfect mash-up of Canadian and Southern U.S. flavours. People head up here for fishing camps, then they come back and just devour platters of barbecue.
You Gotta Eat… the St. Louis–Style Pork Side Ribs
The rub is paramount for any ribs. At Buster’s it’s a savoury-sweet original recipe made with peppers, garlic, sugar, chipotle and paprika. The rub is specially formulated to make the most of the custom cherry-, apple- and pecan wood blend they use in the smoker, where the ribs are cooked for about six hours. Just when the meat is ready to fall off the bone, it’s taken out and smothered in the blueberry barbecue sauce. The restaurant serves about 100 plates of ribs every day.
