We were in town for a season-two shoot and ended up at this café for lunch. Okay, we came for the maple bacon doughnuts, and stayed for the lasagna. Then I locked myself in my trailer and demanded we film a segment here for season three. (That last part is not true. I don’t have a trailer.)
You Gotta Eat… the Maple Bacon Donuts
The secret to the restaurant’s most popular dessert is the maple bacon glaze that’s both in and on the donut. Chef McKeown dices his house-smoked bacon, fries it up and then deglazes the pan with maple syrup. Once reduced, the mixture is pureed and becomes opaque while still leaving the bacon a little chunky. The glaze is mixed with flour, yeast, butter, eggs, sugar, and more maple syrup and bacon to form the actual donut. After deep frying, Mike brushes on even more maple bacon glaze and serves the donuts with crème fraîche and a squizzle of cranberry coulis.
